Depends what you're doing in your playthrough though, if you aren't bothering with the guild storyline, then could go in any direction really.

why join the stormcloak - didnt chop my head - takes the fight to thalmor - earlier access to heavy armour - can listen to him begging for his life before strip him for nice piece of armour - better speech in the end
why join the imperial - can get free steel from blacksmith at helgen - earlier access to light armour and 2 handed weapon - double your wage when you win the war !?!? and can home to drink soup - become storybook legend (according ulfric ) - unite skyrim and the empire
u guys decide double your pocket money and get to drink soup, or fight another war against the dominion

I'll go with ulfric anytime to fight the aldmeri dominion. (regardless of whether they win the war, u get to kill the emperor anyway)

this guy is kinda right kinda wrong
Proud, Traditional Nordic Warriors have a higher chance of siding with Stormcloaks.
Law abiding citizens whose lives have benefited from order brought by Empire have higher chance of siding with them.
Assassin types since the Guild in Skyrim is Dark Brotherhood who is being attacked by Empire have a higher chance to side with Stormcloaks and any anti-Empire factions out of their own survival.
Thieves I think have higher chance of siding with Empire. Reason is their symbiotic/reliance (whatever you want to call it) to Maven Blackbriar who chooses Empire.
Way of Voice, Shehai, Spiritual individuals, Dark or Light, Yin or Yang (Like myself leaning towards Dark Spirituality) will stay out of the affair altogether.
It is further evident by the fact that I've only finished Civil War 4 times for sake of experiencing what the game has to offer. 1 siding Imperials almost as reflex. 1 siding Stormcloaks. 1 side Imperials but turncoat and gave Storcmloaks Jagged Crown and last one sides with Stormcloaks, turncoat gave Jagged Crown to Imperials.
Another evidence that those who seeks spirituality will not take part in the Civil War and politics is Greybeards. Sure you know because politics is an annoyance you cannot ignore completely. But it will only be limited to knowing whose fighting who.
There's not much different worth talking about for whichever you side with. But the main thing is there will be 9 shrines in the Solitude temple if you go with Ulfric. The Imperials are banning worship of Talos, which means there are only EIGHT shrines if they win the war
Eight is pretty much returning to a past Imperial tradition anyway. That's why the Prophet in TES4: Oblivion's Knights of the Nine expansion referred to it as "The Eight and One".
As we all know, the Imperials already worshipped the Eight Divines since the religion was instituted by Alessia so long ago. The Ninth Divine, Talos, was added to appease the Nords whom were conquered by the Empire during Tiber Septim's time.
