The game does scale difficulty with your level, but some places are really high level and shouldn't be attempted until you actually get the quest to go there. There's a cave outside of Whiterun under one of the stones (necromancer there) that has two trolls in it. No matter how hard I tried, I couldn't kill either before they killed me. Of course I was only level 8 at the time!
Keep in mind that the gear you have interacts with the points you spend on your abilities. If you're putting points into speech, it doesn't help with your stealth. Even though you may have armor and such, you need to improve your sneak skills to be able to stand right in front of an enemy and them not even see you. One handed/two handed doesn't apply to Bows. Forget spending a point for 7x dagger if you're only using your bow.Â
Get a helper too, they'll tank for you. I found that by giving them good armor and weapons increase the length they can battle before giving up or getting killed. Keep in mind that they may also impact your sneak abilities. So when you start to enchant items, give them armor and footwear that also adds sneak ability. If you give them a two-handed weapon, dual enchant the armor to increase two-handed skills & sneak. When I upgrade my characters weapons and armor, I usually pass down what I was using to my helper, then I sell what the helper was formerly using. It's gratifying to see your help land a critical hit!
