For me so I can carry more I just used the console command to adjust my weight. I still end up having to use TGM everytime I start a new game as I am told I can not run even through my weight is lower then my max weight. I usually carry over 5000pds which include weapons, clothing, potion and other dragon related items.
Moved from Breezehome to Vlindrel Hall, and at this point I hadn't sold anything worth more than 75 gold because my speech skill was so low I wasn't even getting half of what they were worth. Hauled it all in one trip, using the drawn bow exploit. My weight was 11930/370!
When I moved from Riften to Solitude I was dragging over 10,000 lbs of weight with me. That was a long walk, I tell you. It took me 3 RL days with only minimal breaks for meals, the bathroom, and sleep. Along the way I more than doubled my weight due to various encounters with spiders, wolves, dragons, and bandits (I simply couldn't part with my 54th pair of fur shoes).
When I finally arrived, the carraige driver outside of Solitude gave me a funny look and asked me why I didn't hire his buddy outside of Riften.
That's when I realized I used the back (eastern) gate in Riften to shorten my trip. D'oh!
My highest weights have been somewhere above 100k for house-building, when I'd just give myself huge amounts of materials for construction and decor and just dump the rest in the provided material chests.
Done legitimately, the highest weight I've ever carried in Skyrim is probably about 30k, moving dragon part hoards from my house in Whiterun to the vendors in the city.
Longest overwieght journeys I've taken without a way to fast travel (horse/potion/etc) is from the East end of the Throat of the World mountain (I can't remember village name at the base of the Steps, but there) back to Whiterun and from Karthspire to Whiterun. Breezehome is my dump home, especially for Smithing and selling.
Riften to Solitude, though? That's quite a haul.
One time I found something to mine, I didn't know what it was, 30 mins later: 2000/500, luckily it was at Embershard Mine and I could walk all the way to Riverwood with the Whirlwind shout.
About 12k when I moved from falkreath to solsthiem. Kinda wish I didn't. I used arvak to fast travel to solsthiem and to ride to my house and stuff.
Clay, must have been. Anything else you can mine stops you after a few items, I'm pretty sure. Clay, each vein has 1000. Which is bizarre, really, given that there's never any use in the game for more than a handful of clay bricks, total. And mining them to sell is far from an efficient use of time.

4500. Cleared out a dwemer ruin... took EVERYTHING. 2 hour walk to whiterun... (commits suicide). Jk. Took ages though. Now I will proudly sit on my 10,000 dwarven ingots.
